Three pumpkin cookies made out of three simple ingredients, a perfect fall treat!
Pumpkin soup, pumpkin pie, pumpkin spice lattes, oh my! Will we ever escape the flavor of pumpkin? Hopefully not! With these cookies you’ll be wishing for pumpkin on top of pumpkin.
Don’t worry, making them is easy as pie. Only three ingredients makes the recipe simple, easy, and most importantly, fun! This recipe is especially important to me, being tied to memories of my mom and the special season that is fall.
You’re going to start with two boxes of spice cake mix, two 16 ounce cans of pumpkin, and a bag of chocolate chips.
Mix the pumpkin, spice cake, and chocolate chips together until they are thoroughly combined. Scoop the batter evenly on a baking sheet and heat the oven to 375. Bake the cookies for a minimum of 20 minutes, or until you can stick a toothpick in the center and it comes out clean.
When they come out of the oven the chocolate chips should be starting to melt, with the cookies soft and chewy while still holding their shape.
They’re the perfect fall treat to have after a long, cold day, with a pumpkin flavor that will gently remind you of fall.
When I had my friend Peyton Mikalunas try them, she was surprised.
“I usually don’t like pumpkin, but I loved them!” Peyton said.
They’re the perfect dessert to ease into fall and have become a welcome land-mark for me to recognize that fall is approaching when I see them set out in my kitchen.
